Chinese Chicken and Yakisoba Noodle Salad

Ingredients

7  oz. Fortune Yakisoba Noodle
1  oz. Twin Dragon Whole Wheat Won Ton Wrappers
4  oz Cooked grilled chicken breast strips
2  oz. Cabbage, julienne strips
2  oz. Snow peas, blanched, chilled
1  oz. Water Chestnuts, sliced
1  oz. Red bell pepper, julienne strips
4  oz. Tangy Asian style Honey Dijon Mustard Dressing
1/2  oz. Cashews, toasted, lightly salted - garnish
1/2  oz. Scallions or green onions, diced - garnish
1/4  oz. Sesame seeds, toasted - garnish
1/4  oz. Cilantro, fresh - garnish
  TANGY ASIAN STYLE HONEY DIJON DRESSING
  (Makes 1 1/2 cups)
1  cup Carolina Honey Mustard BBQ Sauce
1/4  cup Rice wine vinegar
3  Tbsp. Chunky peanut butter, natural
2  tsp. Dijon mustard
1  Tbsp. Soy Sauce, Kikkoman
2  Tbsp. Honey
3  Tbsp. Sesame oil, toasted
  Sea Salt and White Pepper, to taste

Instructions

1) Blanch noodles in boiling salted water for 1½ minutes, then cool noodle down with cold water and drain completely. *Make sure noodle is dry before blending with dressing
2) Cut won ton wrappers into strips and fry in Hot oil for 30 to 45 seconds or until golden brown.
3) Combine first 5 ingredients with Tangy Asian Style Honey Dijon Dressing in large mixing bowl and blend to incorporate dressing.
4) Add garnish toppings to your liking and serve immediately.

6) Add all ingredients to mixing bowl except for salt and pepper. Whisk until peanut butter is fully incorporated.
7) Optional: Adjust seasoning for salt and pepper. Add more rice wine vinegar to thin out.
