Almond Cookie Shrimp

1  cup Twin Dragon Almond Cookie Crumbs, fine
1  lb. Shrimp, peeled and deveined, tail on, 21-25 count
1  cup Tempura Batter Mix, dry
2  cups Tempura Batter
1  cup Panko Breadcrumbs
1/2  cup Coconut, shredded (optional)
  Oil for frying
1  cup Tropical Salsa (optional)


1) Mix Almond Cookie Crumbs with panko breadcrumbs. Add shredded coconut if desired.
2) Heat oil to 350 degrees F.
3) Dust shrimp with dry tempura batter mix, DO NOT dust the tail shell part.
4) Dip shrimp in tempura batter. DO NOT dip tail on shell part in batter.
5) Cover shrimp with Twin Dragon Almond Cookie Crumb mix.
6) Fry shrimp for 1½ - 2 minutes.
7) Drain onto paper towel.
8) Serve with Tropical Salsa.
