2  Packages Udon Noodles Chicken Flavor Packet
1/2  lbs. Sliced chicken
1/2   Medium onion, sliced
2  Cloves Minced garlic
1/2   Carrot, cut into small strips
2  - 3 leaves Cabbage, chopped
2   Shiitake mushrooms, chopped
1   Green onion, cut into 2" pieces
1  Tbsp. Olive oil
2  Tbsp. Yakisoba Sauce (found in Asian supermarkets)
1  tsp. Soy sauce
1/4   Green onion, finely chopped for topping


1) In a wok or skillet, heat oil over medium high heat. Stir-fry meat until almost cooked. Sprinkle with chicken flavor packet.
2) Add onion and cook until soft.
3) Add carrots, cabbage, Shiitake mushrooms and green onions. Stir fry for a couple of minutes.
4) On stove top, boil noodles for 2 minutes or cook in water in microwave for 1 minute (time is approximate as microwaves temperature varies).
5) Drain and separate noodles reserving 2 Tbsp water, add noodles to the meat and vegetables. Add reserved water and cook covered for 2 minutes.
6) Add Yakisoba Sauce and soy sauce mixing together. Serve sprinkling fresh green onions on top.
