4  oz. Fortune Ramen Noodles - Pork Miso Flavor
1/2  cup Olive Oil
2  cups Sliced onions
12   Garlic cloves, smashed
2  Tbsp. Achiote paste
2  Tbsp. Tomato paste
2  tsp. Ground cumin
1  tsp. Black peppercorns
1/2  cup Chopped cilantro stems
3   Bay leaves
2  qts. Vegetable, chicken or pork broth
2  oz. Pulled pork
  Corn kernels, as needed
1  oz. Roasted pepper strips
  Cilantro leaves, garnish
1  Tbsp. Chopped scallions, garnish
  Lime wedges, garnish


1) Soup:
2) Heat olive oil sauté' sliced onions and smashed garlic until onions are translucent and beginning to brown.
3) Add achiote paste, tomato paste, ground cumin, black peppercorns and cook for 3 minutes.
4) Add chopped cilantro stems, bay leaves and vegetable, chicken or pork broth. Simmer for 30 minutes. Strain into large bowl, season pressing out all of the juices, season with salt to taste.
5) Remove flavor packet and reserve for another use. Heat noodles per package directions. Add to individual bowls.
6) Arrange pork, corn and pepper.
7) Add broth until it comes up just to the top of the noodles.
8) Garnish with cilantro and scallions and serve with slice of lime.
